Great suggestion! Anything to make a candidate stand out and give them an edge over the competition is a great idea!
I find that language demands are a regional thing. Here in Canada, employers ask for French and Mandarin/Cantonese (especially on the West Coast), not Spanish.
Also, language training is something many employers will pay for through professional development money. It is worth asking your supervisor or HR rep to see if tuition can be reimbursed.

I live in NH and when I first moved here 20 years ago, French was predominant (many immigrants from Quebec here), but now Spanish is becoming more in demand. I love the Spanish language and I enjoy learning it, so I don't mind working at it and studying it - it's a pleasure! I hope it helps me in my desire to change careers midlife, if not, at least it is a pleasurable "hobby".
